In this unprecedented night, Carlos Testino will receive Rafa Zafra. Together, they will delight their guests and offer a unique experience, highlighted by the combination of Peruvian and Spanish flavors, as only chefs Testino and Zafra can do it.

Carlos Testino graduated from school in 1993. At that time, there were only three culinary institutes in Peru: INAT, Los Andes Institute and the fondly remembered Chef Bleu, where he began to study with great enthusiasm. However, he later decided to go for more. That is why in 1996 he decided to go to West Palm Beach, United States, to study in the Florida Culinary Institute. He then started to work in a restaurant, where a customer was fascinated with his ceviche, tricolor tiradito and causa. This customer was the current president of the United States, Donald Trump. "One day he came up to me and offered me to work for him in his yacht as sous chef, traveling around several Caribbean islands. It was an amazing experience", he says.
Back in his country of origin, Carlos became a great brand creator, guided by his passion for avant-garde food and a courageous support for Peru. He began to develop increasingly recognized gastronomic projects and currently has eight of the best restaurants in Lima, together with his partners Alfredo, Eduardo and Jose Aramburu. Isidro Bistró Limeño, flagship restaurant of Hyatt Centric San Isidro Hotel, not only offers a combination of Peruvian and French cuisine, but also focuses on making each space unique.
His passion and conviction take him to reinvent himself and to convey his essence in each bite: "I am known for bringing the world's cuisine and for mixing creativity and art on the table; I think that is my contribution to the gastronomy of the country", he says.
Rafael Zafra was born in Alcalá de Guadaira (Seville, Spain). His family used to run the old Alcalá Inn (Posada de Alcalá) and that translates as having been in the kitchen since the age of 16. This place has shown him the foundations, respect and love for Andalusian cuisine. In 1997, he decided to enroll in the Seville Culinary School, Heliopolis. He later gained experience working in the kitchens of renowned chefs, such as Tristan, in Mallorca, and Arzak, in San Sebastian. He has also attended several patisserie seminars given by Paco Torreblanca, who is known as the best patissier in Europe.
In 2008, as a result of his contributions of Andalusian and purist flavor, and with Ferran Adrià's green light, Rafael took over the kitchen of El Bulli as head chef and started to assist in a complete new universe. At only 26 years old, he won and retained two Michelin stars, apart from having received 2 Sols from the Repsol Guide. In 2010, Albert and Ferran asked him to collaborate with the opening and development of their new projects in Barcelona, Tickets tapas bar and 41º cocktail bar That same year, he became culinary advisor for Oasis hotels and worked in Spain and Cancun.
At present, he continues working with the Adrià brothers in the Heart Ibiza project. Moreover, he has been working since 2015 on his most personal project: Estimar restaurant in Barcelona, together with the Gotanegra family. Estimar seeks to honor and convey his purest love for the Mediterranean Sea. In 2019, Estimar received a Michelin star, doing justice to his words: "Estimar is about love for the sea and its raw material, work with dedication and passion for our customers".
