Ricardo and Augusto are two young chefs who have gained attention and recognition within regional cuisine. Their projects —Siete in Lima and Proper in Buenos Aires— are known for being simple, familiar and local. The chefs invite you to be part of a different experience, in which the combination of flavors does not disregard neither the respect for ingredients nor a flawless technique.

He has gained experience alongside Virgilio Martinez and especially with Rafael Osterling in Mercado, Rafael and Felix, where he was chef until he decided to start his own project. He first opened Senzo with Virgilio in Cusco and then Felix, by Rafael and before that he had worked in restaurants in Germany, the Netherlands and Sydney, in the famous Rockpool.
This Peruvian chef seeks to leave extravagance aside in order to allow for the simplest, most familiar and classic rituals of eating good food.
His proposal is that of a classic cuisine with an invisible technique and a flawless execution, together with ever-present and well-balanced flavors. His dishes are cleanly and consistently prepared with local taste.
He used to be a publicist and an art director. He has also had a catering service with his mother for several years.
He is now one of Proper's chefs and owners, a restaurant in Buenos Aires that is currently N° 44 of Latin America's 50 Best Restaurant.
His gastronomic proposal shows a deep regard and respect for ingredients which are prepared with minimal fuss and brings sweet, bitter, salty and sour flavors into harmony.
