Born and raised in San Jose, Uruguay, Carlos Calandria has been interested in cooking from a very young age. His passion for tourism led him to the hotel and catering business, which showed him firsthand the dynamics and tasks of the gastronomic spaces.
He has managed the Food and Beverage sector of international chain hotels, such as Marriott, and he has been Executive Chef at different hotels in the capital city and in the interior of the country, thus gaining significant culinary experience as well as in leading multidisciplinary teams.
He is currently Executive Chef at Hyatt Centric Montevideo, with Plantado restaurant, Moderno Bar and the Banquet and Room Service areas.
Guillermo Gonzalez Beristain (PANGEA, Nº 30 Latin America's 50 Best Restaurants)
Originally from Ensenada, Baja California, Guillermo Gonzalez Beristain has shown interest in cooking from a very young age. He has graduated with honors from the Culinary Institute of America and has worked in Michelin-starred restaurants, such as Jaun de Alzate, in Madrid, Table Gourmand, in Strasbourg and Troutbeck, in New York.
In 1998, focused on having his own restaurant, he opened Pangea and revolutionized the restaurant industry in Monterrey. He has managed to stay among Latin America's 50 Best Restaurants for six consecutive years. With a great effort and determination, Pangea evolved and became Grupo Pangea, which is currently comprised of ten restaurants (Pangea, Bardot, Chino Latino, La Felix 401, La Embajada, Vasto, La Felix Nuevo Sur, La Reynita, Calle 7 y Libertad).
He is currently part of the Diplomatic Corps of Mexican Chefs, which aim is to promote Mexican cuisine around the world. In 2016 and 2017 he participated as a judge of the reality show “Top Chef Mexico”, produced by Sony Mexico.
