Jaime Rodríguez Camacho is a leading Colombian chef and creative innovator, whose restaurant, Celele, was ranked by Latin America’s 50 Best Restaurants in 2020. Rodríguez Camacho is also the co-founder of Proyecto Caribe Lab, which is focused on researching biodiversity in gastronomy and educating global audiences on the science of food and culture. Through his travels, Rodríguez seeks to be an agent of change, raising awareness on the working conditions in the food industry and highlighting the communities of farmers, fishermen and artisans that play an important role. To achieve these goals, Rodríguez carries out a range of food-related activities and services in Cartagena: pop-up dinners, restaurant consulting, cooking classes, gastronomic tours, and restaurant training for vulnerable communities.
