Coskun Uysal is part of a new wave of internationally trained Turkish chefs, who share a deep empathy for the traditions of Turkish - Ottoman cuisine. Uysal was first educated at Anadolu University, then trained at The Leith School of Food and Wine in London. After stints at The Savoy, River Café and Jamie Oliver’s 15 Restaurant, he returned to Turkey. In Istanbul, he began working for the House Café group, becoming executive chef for its 12 restaurants, where he re-imagined traditional Ottoman recipes. Uysal also found time to start his own restaurant, Moreish, which quickly attracted a following among discerning Istanbul locals and international visitors. Now based in Melbourne, Australia, Uysal is preparing to open his modern Turkish restaurant, TULUM, in Balaclava.
