Luiz Filipe Souza, the head chef of the restaurant Evvai in São Paulo, has been described as modern, creative and dedicated to his craft. At his signature haute cuisine restaurant, Souza explores his origins, the cultural exchange between Italy and Brazil, practicing what he calls "Oriundi cuisine": a cuisine that combines Brazilian regional products with Italian recipes. His goal is to draw meaningful connections between traditional techniques and contemporary culture, between the cultures of Brazil and Italy. In 2019, Evvai received its first Michelin star and was also ranked by Latin America's 50 Best Restaurants 2019. Souza’s restaurant Evvai once again received recognition on the list, earning the 28th spot.
