Emma Cardarelli began her culinary career by cooking at ITHQ, Montreal’s foremost culinary school, where she was taught by Chef Jean-Paul Grappe. Chef Grappe sent Cardarelli to intern at Globe restaurant, where she met her mentor Frederic Morin, head chef of Joe Beef. After two years at Joe Beef, Cardarelli rose quickly through the ranks from demi-chef de partie to sous-chef. She then moved to London and worked almost a year at one-Michelin starred restaurant, The Greenhouse. Back in Montreal, after serving as head chef and co-owner of the restaurant Nora Gray for almost ten years, Cardarelli learned to be an effective manager and business owner. Cardarelli is also a partner at Restaurant Elena, established in 2018, also in Montreal. Restaurant Elena is well-known for its naturally leavened wood-fired pizza, homemade pasta, and a selection of sought-after natural wines.
