Chef José Ramón Castillo is the creator of QUE BO! Mexican Evolutionary Chocolate, which has been open since 2004.
The international guide Le Guide de Croqueurs de Chocolat has recognized him as one the world's best chocolatiers since 2012. Castillo won the gold, silver and bronze medals in the 2018 International Chocolate Awards. In 2013, the SAGARPA (The Secretary of Agriculture, Livestock, Rural Development, Fisheries and Food) recognized him as the greatest exponent of Mexican cocoa and chocolate for successfully developing the concept of “Evolutionary Mexican Chocolate work” which meant using a sophisticated technique to recover traditional Mexican ingredients and flavors and “updating” them to a product that shows a modern approach. Castillo was also awarded the title of “Master chocolatier for the Americas” by the University of Cergy-Pontoise in Paris.
His book, KAKAW, in collaboration with Grupo México, has been recognized as Best Book of Chocolate Making, Best Research Book and Best Book for a Civil Society in the Gourmand World Cookbook Awards, and has also been awarded the special prize The World Great Heritage Book by UNESCO.
