Criterión - Bogotá
Chef Mark Rausch and his brother Jorge are among some of the most important personalities in Colombian cuisine. They stormed the Colombian gastronomic scene when they opened their restaurant Criterión, in Bogota.
Mark began developing his culinary skills in Canada. There, he studied at the Pacific Institute of Culinary Arts. Upon completion, he worked at famous restaurants across Canada including Morresy’s, Aqua Riva and Laci’s. He later spent 3 years expanding his skillset to include pasties at the Hotel Delta Pinnacle under the tutelage of well-known pastry chef Jean Pierre Sánchez.
After more than 8 years in Canada, he and his brother opened his own restaurant in Colombia, Criterión. Later, at the request of his customers, he founded the well-known Rausch Patissier shop. Criterión has since been awarded rankings of 19 and 39 by San Pellegrino Latin America's 50 Best Restaurants list for 4 consecutive years. It has also been acknowledged as one of Colombia's best restaurants.
Finally, their popularity brought them to the television screen and they are now recognized for their programs on elgourmet.com and Utilísima channels. They have also been on the reality TV show “Cocineros al Límite” and have participated in MasterChef Colombia as judges and official pastry chefs. Mark is currently the VP of the Culinary Department and Partner of Muncher S.A.S., a promising start-up in Colombia.
